Apple and Blueberry Pancakes

Serves: 4
Method:

1. In a large bowl combine flour, egg and half the milk, using a hand beater or whisk

2. Gradually add the rest of the milk until mixed through

3. Add apple and gently mix through

4. Heat frypan and spray with a little oil

5. Drop tablespoons of mixture onto fry pan, then evenly drop blueberries on top of the mixture. When bubbles appear on the surface of the mixture, flip and cook on the other side until golden brown

6. Serve warm with a drizzle of maple syrup

Ingredients:
  • 1 cup self raising flour
  • 1 egg
  • 1 cup low fat milk
  • 1 apple (granny smith or pink lady)
  • 1 punnet of blueberries
  • Spray oil
  • Maple syrup to drizzle
