- Mix 1 1/2 cup of self raising flour, 1/2 cup of polenta, 3 medium eggs, 1 teaspoon of salt, 1/4 cup of castor sugar, 1/4 cup of melted butter, 1 can of cream corn, and 1 cup of full cream milk. Mix until you get a nice creamy consistency.
- Place into muffin tray and place i nto a preheated oven of 180 - 200 degrees celcius for approximately 20 - 25 minutes of until golden brown colour.
- Remove muffin tray from the oven and let the muffins cool until they are ready to be served
