Cold Carrot Salad

Serves: 1
Ready In: 10 minutes
Method:
  1. Peel and wash the carrots, grate them into a bowl
  2. Blend the carrots with the coriander and add a few drops of lemon or lime juice
  3. Cover the bowl and place in the fridge. 
  4. Serve the salad cold with a dash of cracked pepper as a snack with meals.
Ingredients:
  • 2-3 tender baby carrots, grated
  • 1x stem of fresh coriander
  • lemon or lime juice, to taste
  • cracked pepper, to taste
